Caption: Ripening bananas exhibit intense blue luminescence under UV light. Their luminescence arises from fluorescent chlorophyll catabolites which accumulate in the banana peels during ripening; their natural further conversion to nonfluorescent catabolites is specifically inhibited by a previously unrecognized chemical modification.
