A genetically susceptible individual is exposed to a food antigen, which activates the immune system and triggers differentiation into Th2 cells that release cytokines with eosinophil properties. Cytokine IL-5 promotes eosinophil production, activation, and recruitment. Additionally, cytokines IL-4 and IL-13 increase esophageal production of eotaxin-3, an eosinophil attractant.
