American Association Of Cereal Chemists To Hold 82nd Annual Meeting

ST. PAUL, MN (September 25, 1997)--The world’s largest gathering of cereal industry professionals will convene their 82nd Annual Meeting in San Diego, California, October 12-16, 1997, at the San Diego Convention Center.

The American Association of Cereal Chemists’ (AACC) Annual Meeting includes a technical program, technical and poster sessions, table-top exhibits, new product/services sessions, educational short courses and social events.

Patricia T. Berglund, director of the Northern Crops Institute, has compiled a technical program covering such topics as Blood Glucose Control and Cereal Carbohydrates; Bread Dough Rheology: Its Impact on Process and Finished Product; Capillary Electrophoresis; Engineering Proteins for Improved Functionality in Food Products; The Food Industry--Global Village 2000; Image Analysis and Microscopy in Cereal Science; Labeling and Regulatory Issues for the Food Product Developer; Low-DE Sweeteners: Source, Structure and Functionality; Low Shear Extrusion: Basics, Applications, and Impact; Modifications of Dietary Fiber: Practical Considerations; Oriental Noodles--From Art to Science; Rice Quality in a Global Marketplace; and Sensory Evaluation for the Global Market.

Over 230 exhibitors will introduce the latest technical innovations in equipment and services to more than 2,000 AACC Annual Meeting attendees. AACC is offering two pre-Annual Meeting short courses: Enzyme Technology, October 10-11, 1997, directed by Barry McCleary/Clyde Stauffer; and Fundamentals of Wheat Flour Quality, October 10-11, 1997, directed by R.
